BBQ Tip OF THE DAY: SMOKE SMART!
Remember these simple tips when using your smoker which will make clean up a whole lot easier!!!
- Line the water pan of your smoker with aluminum foil. This keeps the drippings from burning onto the pan which can be tough to clean.
- Lightly coat the insides of the smoker with a nonstick cooking spray. This also makes grease cleanup much easier!
RECIPE OF THE DAY: SWEET & SALTY SMOKED HALIBUT
Keeping with the fish recipe, try this recipe for four.
Ingredients
4 apple or other fruit wood chunks
4-6oz halibut steaks, 1 inch thick
1/2 cup packed brown sugar
1-2 tbl balsamic vinegar
2 tsp kosher salt
1 tbl olive oil
Preparation
Prepare smoker as per user manual. Rinse fish and pat dry with paper towels. In a small bowl, combine brown sugar, vinegar and kosher salt. Brush both sides of the fish with olive oil. Using your fingers, rub the sugar & salt mixture into the tops of the fish steaks. Place fish steaks in your smoker and smoke for 1 hour or until the fish flakes easily when tested with a fork and...
