BBQ TIP OF THE DAY: BASIC BBQ GRILLING & SMOKING RULES OF THUMB
- Don’t cook cold meat - always try to bring meat to room temperature before cooking in order to best keep the outside of the meat burning or charring before the inside gets to the desired cooked temperature.
- Preheat properly - for the best BBQ flavor always preheat your smoker or grill to the desired cooking temp.
- Don’t poke & prod - piercing meats and sausages and pressing down on meats while cooking releases the meats juices which will dry out whatever you are cooking. When grilling, only turn meats on the grill over once or twice at most!
- Always remember food hygiene - always put your cooked meats on a clean plate or cutting board rather than the one it was prepped using. Also never re-use marinade that had raw meat in it.
RECIPE OF THE DAY: PORK FRIED RICE
This recipe is really yummy and serves 4-6 people.
Ingredients
For the pork:
1/4 cup soy sauce
1/4 cup oyster sauce
1 tbl fresh minced ginger
1 tbl minced garlic
1 tbl sesame oil
1# pork tenderloin
1/4 cup sweet & sour sauce
For the rice:
4 tbl canola oil
1 tbl minced fresh ginger
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 cup diced red onion
1/2 cup thinly sliced green cabbage
1/2 cup thinly sliced snap peas
1/2 cup peeled, diced carrot
1/2 cup diced celery
1 tbl minced garlic
6 cups short grain white rice, cooked & cooled
3 eggs, beaten
1/4 cup soy sauce
1/4 cup oyster sauce
1 tbl sesame oil
1/2 cup chopped green onion
2 tbl toasted sesame seeds
Preparation
For the pork: In bowl, add soy & oyster sauce, ginger, garlic & sesame oil. Add pork & marinate for 1 hour. Heat grill to med-high and grill pork on both sides until done. Use remaining marinade to baste meat as it cooks. When meat is almost done, glaze both sides with the sweet & sour sauce and finish cooking while sauce caramelizes. Remove from grill, let stand 10 minutes & cut into 1/2” pieces.
For the rice: Heat oil in a large skillet or wok on high heat until oil almost begins to smoke. Add ginger and all veggies except for garlic and cook for 3 minutes or until the veggies are cooked, then add garlic. Before the garlic browns, add rice & mix rapidly so rice does not stick to the sides of the pan. Once mixture is thoroughly combined, pour beaten eggs over rice & veggies and toss rapidly until all egg is cooked. Add soy sauce, oyster sauce and sesame oil. Mix thoroughly and then add pork. Garnish with green onions and sesame seeds.
Serve immediately and….ENJOY!!!
