Smoked Potato Skins Recipe
This is a great appetizer to make when you have the smoker already heated up. The low temp of the smoker and the smoke environment adds great flavor to the skins and allows the flavors to blend together really well.The recipe serves 8-10 people.
Ingredients
8 large potatoes
3/4 cup of cheddar cheese
1/2 cup green onions
1 tbl paprika
1 tsp cayenne pepper
1 tsp black pepper
1 tsp garlic powder
1 tsp salt Olive oil
Preparation
Bake the potatoes until tender and then cut lengthwise into quarters. Scoop out to make shells in the skins. Paint with olive oil and coat both sides with dry ingredients. Place in smoker at about 200 degrees F for 1 hour. Sprinkle the skins with cheese and let the skins smoke until the cheese melts. Top with green onions and serve with your favorite BBQ sauce and….ENJOY!!!
